bread baking mix

A digestible, lectin-free (& gluten-free) bread for home baking.

 

Ingredients : Millet flour 50%, cassava flour, tapioca starch, arrowroot powder, psyllium husks, golden flaxseed flour, salt, acidifier: potassium hydrogen tartrate, thickener: xanthan gum, raising agent: sodium bicarbonate, coriander.

All ingredients used are organic . However, for cost reasons, we have chosen not to obtain our own organic certification for the product itself.

Preparation :
1.) Mix the ingredients: Mix 500g of baking mix with 7g of dry yeast, then add 20g olive oil, 380g water and 2 large eggs (or instead of eggs: 350g apple puree or fruit puree with 140g water).
2.) Knead the dough: Knead well for at least 5 minutes, then let it rest for about 20 minutes.
3.) Shaping: Shape into a loaf and cut several times with a knife.
4.) Resting: Let the bread rise for 1 hour in a warm place (40°C in the oven)
5.) Baking: Bake in a convection oven at 170°C for 50 minutes.

Alternative preparation

Without yeast :
Replace the yeast with 10g of baking powder.

Without egg or applesauce :
- Option 1 : Use 350g of skyr or quark instead and add a little more water if needed.
Option 2 : You can simply omit the applesauce or egg; the bread will then be a bit denser. In this case, use 380g of water. Adding 10g of baking powder and/or a few more grams of yeast will make it lighter.
- Option 3: Instead of applesauce or eggs, you can add 30g of cassava flour and increase the amount of water to 520g. The bread will also be somewhat denser and can be made lighter by adding 10g of baking powder or a few more grams of yeast.
