Recipe suggestions for cakes & treats

The cake flour mix can basically be used for any cake recipe - usually, a little more liquid is needed than with conventional flour.

Cherry crumb cake

Ingredients :

For the floor:

  • 100g sugar
  • 100g soft pasture/hay milk butter
  • 1 egg
  • 250g flour mix
  • 10g baking powder
  • 125ml hay milk or plant-based lectin-free alternative (e.g. almond milk)

For the topping:

  • 2 jars of sour cherries or Morello cherries
  • 100g flour mix
  • 70g sugar
  • optional: 1 packet of vanilla sugar
  • 65g cold pasture/hay milk butter

Directions :

1. For the base, cream the sugar and butter with a hand mixer or food processor until fluffy, then stir in the remaining ingredients. Grease a springform pan (26-28cm) and pour in the batter.

2. For the topping, spread the cherries on the base.

3. Preheat the oven to 180°C. For the crumble topping, quickly mix the flour, sugar, and butter by hand or with a dough hook. Crumble the compact dough and distribute it over the cherries.

4. Bake the cake in the center of the oven for 35-45 minutes and check with a toothpick to see if it is done. Remove and let cool.

pancake

Ingredients :

Per 100g of flour mix:

  • 1-2 eggs
  • 150ml hay milk or almond milk
  • 10g liquid butter or coconut oil
  • 15g sugar (or 15 drops of monk fruit or 1 tsp (approx. 6g) monk fruit powder)

Optional: 10 ml sparkling water or a pinch of baking powder

Directions :

Mix all ingredients together well.

For thin pancakes, the batter should be almost liquid; if necessary, thin it with more milk.

For thicker pancakes , use less milk so the batter becomes thicker. Then it's recommended to add a small amount of baking powder.

Using a ladle, pour enough batter into the hot, greased pan to cover the entire bottom.

Once the pancake is firm, turn it over and finish cooking briefly.

Quantity variations , e.g., for more or less sweetness, are possible. Just try it out.

Cream cake

Adjust quantities to the size of the springform panexample for 28cm:

Ingredients for shortcrust pastry :

  • 200g flour mix cake
  • 80g butter or coconut oil (important: room temperature)
  • 80g sugar
  • 8g baking powder
  • 20g milk
  • 1 egg (also possible without egg, then add more milk)
  • Optional: Vanilla

Ingredients for the filling :

  • 600g sour cream
  • 600g cream
  • 3 eggs
  • 20g tapioca starch or flour mix
  • 150g sugar (or 120 drops of monk fruit)
  • Vanilla, cinnamon, or another flavor

Instead of sour cream and heavy cream, yogurt or quark can also be used for a reduced-fat or higher-protein version.

Directions :

  1. Preheat oven to 170 degrees fan-forced, line springform pan with baking paper and grease the rim.
  2. Shortcrust pastry: Combine all the ingredients for the shortcrust pastry in a bowl and knead into a smooth dough. Then press small pieces of the dough onto the tart base until the entire base is covered. If a rim is desired, roll the remaining dough into a rope and then press it against the edge of the springform pan.
  3. Filling : Combine all ingredients and mix well. Pour into the springform pan and bake for approximately 45 minutes. Want a cinnamon flavor? Sprinkle the cake with a cinnamon-sugar mixture 5 minutes before the end of baking and return it to the oven. Let the cake cool in the oven for 10 minutes.

Afterwards, allow the cake to cool completely and refrigerate. Only remove it from the pan and cut it after 8 hours.

Waffles

Ingredients for 4 waffles :

  • 100g flour mix cake
  • 40g butter or coconut oil (important: room temperature)
  • 40g sugar (or 40 drops of monk fruit or 2.5 tsp (approx. 15g) monk fruit powder)
  • 2g baking powder (0.5 tsp)
  • 1-2 eggs
  • 80g milk
  • Optional: 50g yogurt or quark (in addition)
  • Optional: 0.5 pack vanilla sugar

It's also possible without eggs – the following ingredients then need to be adjusted to 100g of flour mix:

  • 180g milk
  • 5g baking powder
  • 40g sugar
  • 40g butter / coconut oil
  • Optional: 50g of yogurt will make the waffles lighter without eggs.

Directions :

  1. Combine all ingredients and mix well with a whisk or beater until a thick, homogeneous mixture is formed. Adjust the amount of milk if necessary.
  2. Spoon the batter into the waffle iron. Experiment to find out how much batter your waffle iron can hold.
  3. Baking time usually needs to be extended slightly.
  4. Enjoy.

Pro tip 😎: Whisk the egg whites separately and carefully mix them with the rest – for even more fluffiness ☺️

Using monk fruit for sweetness and eggs or quark, you can make a particularly protein-rich and low-calorie treat.

Banana bread

Ingredients :

  • 200g flour mix cake
  • 3 ripe bananas
  • 100g grated apple
  • 2 eggs
  • 10g baking powder
  • 1 tsp cinnamon
  • 50g of nuts of your choice, e.g. walnuts

It's also possible without an egg – just add 25g more milk.

Directions :

  1. Core the apples, grate them finely and mix with mashed bananas.
  2. Beat the eggs until frothy.
  3. Mix flour, baking powder, and cinnamon separately, add to the rest of the ingredients, and stir briefly and vigorously. Add chopped nuts.
  4. Pour the thick mixture into a greased loaf tin and bake in a preheated oven at 180°C (350°F) for 45 minutes. Test for doneness with a toothpick.

Sweetener can be added to the sugar-free banana bread if desired – or a dusting of powdered sugar on top for a pretty appearance :)

Kaiserschmarrn

Ingredients :

  • 125g flour mix for cakes & pancakes
  • 5 g baking powder
  • 1 pinch of salt
  • 130 g milk
  • 4 eggs
  • 40g liquid butter or coconut oil
  • 50g sugar or 50 drops monk fruit extract or 3 tsp (approx. 18g) monk fruit powder
  • Icing sugar for sprinkling

Directions :

Mix all ingredients in a bowl using a whisk.
